Ingredients

For muffins

½ cupsbutter
½ cupssuperfine caster sugar
2large eggs
1 cupAll purpose flour (heaped)
1 teaspoonBaking powder
½ teaspoonsbaking soda
1 teaspoonground cinnamon
⅜ cupsApplesauce
For the icing (frosting)
2 cupspowdered sugar
5 tablespoonsmilk
1 teaspoonvanilla extract
To decorate
1 teaspoonground cinnamon
1Apple quartered cored and chopped

Kitchen Utensils

1 Pot, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Serrated knife, 1 Tablespoon, 1 Wooden spoon, 1 Peeler, 1 Fine grater, 1 Sieve, 1 Garlic press, 1 Can opener, 1 Small knife

Directions

1 For the muffins: heat the oven to 180°C (160° fan) 350°F gas 4. Grease 8 large muffin tins.
2 Beat the butter and sugar in a mixing bowl until light and fluffy.
3 Add the eggs, one at a time, beating thoroughly after each addition.
4 Fold in the flour, baking powder, bicarbonate of soda, cinnamon and apple sauce and stir until just combined.
5 Spoon into the tins and bake for 25 minutes until risen and golden.
6 For the icing: sift the icing sugar into a bowl and stir in the milk and vanilla until smooth. If the icing is too stiff, add more milk.
7 Spoon the icing on top of the muffins, allowing it to run down the sides. Sprinkle over the cinnamon and top with apple pieces.
