Step 1/2

Mix the sifted flour with the egg yolks, cream, baking powder, salt and rum, and knead to a smooth, firm dough. Roll out the dough thinly on a floured surface and cut into strips (about 3 x 12 cm) (approximately 1 x 5 inches) with a pastry cutter.

Step 2/2

Slit each dough strip along the center to form a loop. Heat clarified butter (170°C) (approximately 340°F) in a frying pan and fry the dough strips in it in portions until golden brown for 2-3 minutes. Drain the fritters on kitchen paper and serve dusted with powdered sugar.
