Frittata with Zucchini
Preheat the oven to 180°C (approximately 350°F) on the convection setting.
Whisk together the eggs, milk and half of the cheese. Season with salt, pepper and nutmeg. Rinse, trim and cut the zucchinis in half lengthwise. Peel the garlic and chop finely. Rinse and spin dry the spinach. Fry the zucchinis in 2 tablespoons hot oil for 2-3 minutes until golden brown and season with salt and pepper. Remove from the pan and briefly sauté the garlic in the remaining oil. Add the spinach and stir together. Pour in the eggs over and distribute the zucchini evenly over the top. Sprinkle with the remaining cheese and bake for about 15 minutes until golden.
Remove from pan, cut into quarters and serve.
