Preparation steps

1.
Mix the flour with the salt and cayenne pepper.
2.
Coat the fish in the flour, shake off any excess and dip briefly in the milk, then back into the flour. Shake off the excess flour.
3.
Heat the oil until very hot and fry the fish in 2 or 3 batches, for 3-4 minutes until crisp. Drain on kitchen paper.
4.
Serve immediately with lemon wedges.

Hi Chloe, The cayenne pepper gives the dish some heat and flavor. If you want to tone it down a little just use regular black pepper.
