150 grams Pastry flour
1 tsp Baking powder
1 Tbsp olive oil

Preparation steps

1.

Rinse the sage leaves and pat dry. Pat the anchovies dry and finely chop.

In a bowl, mix together the flour, baking powder, olive oil, the anchovies and 300 ml (approximately 10 ounces) cold water and stir until a thick liquid batter is formed. Season with a little salt.

3.

Heat the oil in a deep saucepan to 170°C (approximately 340°F). Pull the sage leaves through the dough, pressing to coat. Working in batches, fry until golden brown about 1 minute. Drain on paper towels and serve.
