Preparation steps

1.

Rinse the sage, pat dry and pluck off the leaves.

2.

Mix the flour, wine and salt until smooth. Add the egg and mix to form a smooth batter. The batter should not be too thick and will be tacky. Let rest for about 20 minutes.

3.

Dip the sage leaves in the batter with tongs and then fry in batches in hot oil (about 170°C, or approximately 340°F) for about 1 minute until golden brown. 

4.

Drain on a paper towel and serve.
