For the potatoes
750 grams cooked potatoes
250 grams Salami (piece)
1 onion
2 tablespoons clarified butter
salt
freshly ground peppers
4 eggs
1 tablespoon parsley
For the salad
Bell pepper (one each, yellow and red)
3 tomatoes
1 Red chili pepper
250 grams Salami (piece)
1 shallot
2 tablespoons White vinegar
4 tablespoons Salad oil
salt
freshly ground peppers
2 tablespoons scallions

Preparation steps

1.

For the potatoes, peel and chop onion. Cut salami into strips.

Slice the potatoes and fry slowly in a large pan with the onions and salami strips in butter until crispy, turning occasionally. Season with salt and pepper.

Just before potatoes are finished cooking, crack eggs over the potatoes and cook until thickened slightly.

Sprinkle potatoes with parsley.

For the salad, rinse bell peppers, cut in half, remove seeds, remove ribs and cut into large cubes.

Rinse tomatoes and cut into eight pieces. Cut shallot and chile pepper into thin rings. Remove chile pepper seeds.

7.

Cut salami into strips.

8.

Mix vinegar and oil and season with salt and pepper. Mix with the prepared salad ingredients and sprinkle with chopped chives. Serve salad with the potatoes.
