1 kilogram starchy potatoes

2 tablespoons butter
3 egg yolks (large eggs)
1 tablespoon Pastry flour
1 tablespoon peppers
freshly grated Nutmeg
1 liter Peanut oil (for frying)

Preparation steps

Peel, rinse and cut the potatoes into pieces. Boil the potatoes in salted water for about 20 minutes until soft. Drain and leave to cool slightly.

Press the still-warm potatoes through the ricer and immediately mix with the butter, egg yolks, flour and nutmeg. Season with salt and pepper, and knead well. If the mixture is too wet or too dry, add either flour or egg to adjust the consistency. The mixture should be well moldable.

Form round croquettes from the mixture and make a smily face, if desired. Heat the oil to 170°C (approximately 340°F) or so longthat when a wooden spoon handle is immersed into, the oil rises up into bubbles. Fry the croquettes in portions in the oil depending on the size for about 3-4 minutes. Remove the croquettes from the oil and drain. Serve hot.
