1 Pineapple
2 liters Frying oil

4 Passion fruit

Preparation steps

1.

For the dough: Melt butter. Combine pastry flour, 75 grams (approximately 2.5 ounces) of starch, baking powder, butter, 1 pinch of salt and 125 ml (approximately .5 cup) of cold water. Stir to form a thick, liquid batter.

Peel, core, quarter and dice pineapple.

Heat oil until a wooden spoon bubbles when inserted. 

4.

Dust pineapple chunks in remaining cornstarch, dredge through dough and fry in hot oil until golden brown, about2-3 minutes. Remove and drain on paper towels.

5.

Juice lime. Cut passion fruit in half, scrape out pulp and mix with lime juice and honey.

6.

Plate pineapple and serve drizzled with sauce.
