8 Elderflower
100 grams Pastry flour
1 pinch salt
1 tablespoon sugar
1 teaspoon Vanilla sugar
Organic orange (zested)
150 milliliters white wine
2 centiliters Orange liqueur
2 tablespoons melted butter
2 egg whites
1 liter vegetable oil (for frying)
powdered sugar

Preparation steps

1.

Rinse flowers and, gently shake and drain on paper towels. 

2.

Combine flour, salt, sugar, vanilla sugar and orange zest. Stir in wine, liqueur and butter, then let rest for 20 minutes.

3.

Beat whites until stiff and fold into batter. Dip flowers into batter and fry until golden brown in hot oil. Remove and drain on paper towels. Dust with powdered sugar and serve.
