2 Tbsps sugar
1 packet Vanilla sugar
1 pinch salt
160 grams Pastry flour
5 eggs
750 grams clarified butter (for frying)
4 Tbsps powdered sugar (for dusting)

Preparation steps

Heat 125 ml (approximately 1/2 cup) of water, milk, butter, salt and sugar and bring to a boil. Add the flour and stir carefully. Lower the heat and continue to cook while stirring until the mixture forms a ball. Place into a bowl and gradually stir in the eggs until the dough is very smooth.

Cut parchment paper into 10 cm (approximately 4 inch) squares and spread with butter. Pour the choux pastry into a piping bag with a large star tip and pipe squiggles on the pieces of paper.

Heat the clarified butter in a deep fryer or saucepan to 180°C (approximately 350°F). Carefully drop the pieces of paper into the hot fat. The dough will slide off the paper (remove with tongs). Fry the funnel cakes in portions on both sides for about 4 minutes until golden brown. Remove with a slotted spoon and drain on absorbent paper. Dust thickly with powdered sugar before serving.
