Fried Dough Balls with Honey
Add the flour to a large bowl and make a well in the center. Crumble the yeast into the well and mix with a bit of the lukewarm milk. Cover and let stand for about 15 minutes. Add the remaining milk, sugar, egg, egg yolks, salt and butter and knead with the dough hook attachment of an electric mixer until a smooth dough is formed. Cover and let rise in a warm place for 50-60 minutes, until doubled in size.
Heat the clarified butter in a large saucepan to 170°C (approximately 340°F). Knead the dough a few times and scoop by the tablespoonful into the hot butter. Fry for 2-3 minutes, until golden brown. Drain on paper towels and let cool. Arrange the cooled dough balls on a glass cake stand or serving platter.
Heat the honey in a small saucepan until smooth. Drizzle the warm honey over the dough balls and serve.
