Fried Donuts with Elderberry Syrup
In a pot, heat water, butter and a pinch of salt. Bring to a boil and stir flour into boiling liquid. Stir mixture with a wooden spoon over low heat until mixture pulls away from the bottom of pot. Remove from heat and beat eggs one by one into batter. Stir in elderberry syrup and place batter in a piping bag with a plain nozzle.
In a deep fryer, heat oil to 180°C (approximately 350°F).
Pipe donut rings onto pieces of greased parchment paper and gently drop rings from parchment paper into hot oil. If any donut rings stick to parchment paper, carefully lift paper from hot oil with a ladle. Fry donut rings until golden brown on both sides. Remove donuts with a slotted spoon and drain on paper towels.
To serve, dust with powdered sugar and garnish with elderflower.
