Ingredients

For the apples
3 large Russet apples
3 tablespoons lemon juice
For the batter
150 grams Pastry flour
175 milliliters dry white wine
3 tablespoons vegetable oil
3 eggs
½ Vanilla bean (split and scraped)
1 teaspoon grated Lemon peel
1 pinch salt
2 tablespoons sugar
750 milliliters vegetable oil (for frying)
sugar (to sprinkle)
cinnamon (to sprinkle)

Preparation steps

1.

Peel and core apples and cut into thick slices. Drizzle with lemon juice.

Separate eggs. Stir together flour, wine, oil, egg yolks, vanilla and lemon zest. Beat egg whites with salt and 2 tablespoons sugar until stiff and fold into batter.

Heat oil to 160°C (approximately 320°F.)

4.

Dip apple slices into batter one by one and fry in portions in hot oil until golden brown.

5.

Lift apples and drain on kitchen paper.

6.

Sprinkle fried apple slices with sugar and cinnamon and serve immediately.
