Cut the tops off the tomatoes, and set aside. Remove the pulp with a spoon. Reserve the pulp of 2 tomatoes and chop. Season the hollowed tomatoes inside with salt and pepper.

Drain hearts of palm hearts and dice finely. Cut avocado in half, remove the pit and cut the flesh into cubes. Mix with lemon juice and hearts of palm.

Slice the spring onions into thin rings and mix with the tomato pulp and parsley. Stir in the oil and season with salt and pepper, then spoon into the hollowed tomatoes. Cover with the reserved tomato tops and serve with toasted olive ciabatta slices.
