1 pinch salt
50 grams sugar
100 grams butter (and butter for the pan)

Preparation steps

For the pastry: combine flour with salt, sugar, butter cut into pieces and egg, knead to a smooth pastry, adding more cold water or flour as needed. Shape into a ball and wrap into aluminum foil. Refrigerate for 30 minutes.

Preheat oven to 180 ° C convection.

For the topping: blanch apricots in hot water, rinse in cold water and peel. Halve and pit. Whisk eggs with crème fraîche, sugar and vanilla seeds until smooth.

Roll out pastry and line buttered tart pan with it, making an edge all around. Arrange apricots on top and spread with creme fraiche mixture. Sprinkle with almonds and bake in preheated oven at 180°C (approximately 350°F) for about 45 minutes or unitl golden brown.

Remove from the oven and loosen from the pan. Dust with powdered sugar and serve.
