Preparation steps

1.
Heat the sunflower oil in a large, heavy-based casserole dish set over a moderate heat.

Season then sear the beef, in batches, until golden brown in colour all over. Remove from the dish and drain on a colander set over a bowl.
3.
Add the onions to the dish and reduce the heat a little. Sweat for 6-8 minutes, stirring occasionally, until softened.
4.
Add the beef back to the dish then sprinkle the flour over. Stir well and allow it to cook for 1-2 minutes.

Add the red wine and increase the heat to high. Let the wine reduce by half, then add the beef stock and bay leaves.

Stir well and bring to the boil. Cover and reduce to a simmer, letting the stew cook gently for 1 hour 20-30 minutes minutes until the beef is tender.
7.
Once the beef is ready, remove the dish from the heat and adjust the seasoning to taste.
8.
Garnish with the sprig of bay leaves and a sprig of thyme. Season once more with black pepper then serve.
