300 grams Puff pastry dough
80 grams Vanilla cream
8 teaspoons Jam (such as raspberry)
1 egg yolk
2 tablespoons Whipped cream

Preparation steps

Roll out the puff pastry to about 5 mm thin (approximately 1/5 inch) and cut into squares about 10 x 10 cm (approximately 4 x 4 inches). Put a 2-3 cm (approximately 1 inch) diameter circle (do not cut the dough) in the middle of each square. Make 4 cuts from the edge of this circle to each corner.

Fold these "blades" under once each, so that a windmill forms. Place them on a parchment-lined baking sheet and  put a little vanilla cream on the center of each.

Put about a teaspoon of jam on each. Beat the egg yolk with the heavy cream and brush the dough with it. Bake about 20 minutes until golden brown. Cool on a wire rack.
