egg yolks (beaten)
1 cup
superfine caster sugar
1 cup
lightly Salted butter (melted)
½ teaspoon
1 ½ cups
All purpose flour (plus extra for dusting)

Preparation steps

Preheat the oven to 180°C (160° fan) 350°F gas 4. Butter a 23cm|9" cake tin and dust with flour.

Set aside 1 tablespoonful egg yolks to glaze the cake.
3.
Whisk together the egg yolks and sugar until the mixture is pale and thick. Gradually whisk in the butter, a little at a time and the vanilla.

Sift in the flour and stir until incorporated.
5.
Spoon into the tin and smooth it out evenly with your hands. Brush with the reserved egg yolk. Make a criss cross pattern over the top.
6.
Bake for about 50-60 minutes until golden. Cool in the tin.
