French Butter Cake

Preheat the oven to 180°C (160° fan) 350°F. Butter a 23 cm / 9" cake tin and dust with flour.
Set aside 1 tablespoonful egg yolks to glaze the cake.
Whisk together the egg yolks and sugar until the mixture is pale and thick. Gradually whisk in the butter, a little at a time and the vanilla.
Sift in the flour and stir until incorporated.
Spoon into the tin and smooth it out evenly. Brush with the reserved egg yolk. Make a criss cross pattern over the top.
Bake for about 50-60 minutes until golden. Cool in the tin.
