For the batter
250 grams butter
150 grams sugar
5 eggs
1 Tbsp lemon juice
350 grams Pastry flour
150 grams cornstarch
1 packet Baking powder
For the filling
400 grams butter
300 grams powdered sugar
3 egg yolks
4 Tbsps Vanilla sugar
3 Tbsps Strawberry Jam
For decorating
25 grams butter
125 grams chopped almonds (peeled)
Maraschino cherry
butter (for the pan)
breadcrumbs (for the pan)

Preparation steps


Grease pan and coat with breadcrumbs. For the batter, mix butter, sugar, eggs and lemon juice until foamy. In a separate bowl, mix flour, cornstarch and baking powder and stir into butter mixture. Pour batter into pan and bake in preheated oven for about 50 minutes at 180°C (approximately 350°F). Remove from oven and let stand for 10 minutes. Remove from pan and let cool. For the filling, mix butter, powdered sugar, vanilla sugar and egg yolk. Remove 1/3 and place in a piping bag with a rosette tip.


Slice cake horizontally into thirds. Spread strawberry jam over first cake layer and spread 1/3 of remaining buttercream over jam. Place second cake layer over first cake layer and spread remaining butter cream over second cake layer. Place third cake layer over second cake layer. In a saucepan, heat butter, almonds and sugar and caramelize until brittle candy forms, stirring frequently. Allow to cool. Decorate cooled cake with almond brittle. Pipe buttercream rosettes on cake and place 1 maraschino cherry on each rosette. To serve, cut into slices.
