125 grams Cultured butter

125 grams sugar
150 grams Pastry flour
100 grams ground Hazelnuts
1 teaspoon Baking powder

Preparation steps

1.

Crush the dark chocolate couverture and melt with butter in a bowl over a hot water bath.

For the batter, separate the eggs into whites and yolks. Beat the yolks with sugar until fluffy and add in the chocolate-butter mixture.

3.

Mix the flour with hazelnuts and baking powder, stir into the egg yolk-chocolate mixture and add in the milk. Beat the egg whites until stiff and fold into the egg yolk mixture.

4.

Line a springform pan (about 26 cm diameter) (approximately 10 inches diameter) with parchment paper and pour in the batter. Bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 30 minutes (check with toothpick).

Remove the cake from oven and leave to cool in the springform pan for 10 minutes. Release the cake from the pan and let cool on wire rack completely.

6.

Meanwhile, draw and cut out a football stencil on a cardboard.

7.

Place the stencil over the cake and dust with icing sugar. Remove the stencil and serve.
