1 shallot (finely chopped)
1 tablespoon butter
1 stale White roll
1 egg
salt
freshly ground peppers
2 teaspoons sweet paprika
1 generous pinch cayenne pepper
400 grams fresh Sausage
300 grams Hot dog
500 milliliters dry white wine
500 milliliters Vegetable broth
1 Herb bouquet (with 2 sprigs parsley, thyme and marjoram)
1 bay leaf
1 onion (finely chopped)
1 teaspoon peppercorns
For the horseradish sauce
2 tablespoons butter
2 tablespoons Pastry flour
125 milliliters milk
100 milliliters Broth
3 tablespoons freshly grated Horseradish (or from a jar)
salt
freshly ground peppers
5 tablespoons Whipped cream

Preparation steps

1.

Sweat the shallots in hot butter and soak the bread in water. Squeeze the bread and tear into small pieces.

Mix the shallot with the well squeezed bread, ground beef and egg and season with paprika, cayenne pepper, salt and pepper. Knead to form a homogeneous mixture and shape into long, small meatballs and place on a flat dish and refrigerate.

Cook the bratwurst and cut into pieces about 5 cm (approximately 2 inches) long.

For the horseradish sauce, cook the butter until foamy, stir in flour, cook and stir in milk and broth with a whisk. Simmer approximately 5 minutes, remove from heat, stir in horseradish and cream and season with salt and pepper. Keep warm.

Pour in wine, 500 ml (approximately 2 cups) of water and vegetable broth with onions and bring to a boil. Add the bunch of herbs, season with salt and pepper, then pour into a fondue pot and keep hot over a chafing dish.

6.

Spoon the horseradish sauce into a bowl and serve with the sausage and the small meatballs.

7.

Everyone will cook their sausages and meatballs and remove with a small slotted spoon.
