green Bell pepper (deseeded and chopped)

tomatoes (deseeded and chopped)

Preparation steps

Heat the oven to 200ºC (180º fan) 400ºF, gas 6.

Wash the fish and pat dry. Rub the insides with the lemon juice and season with salt and pepper.

Heat 4 tablespoons of the oil in a pan and gently cook the onion until soft but nor brown. Add the garlic, chilli and potato and continue cooking for 2 minutes. Remove the pan from the heat.

Brush 2 double-layered sheets of tin foil with a little oil and place a fish in the middle of each one. Place a little of the onion mixture into the cavities and spread the remaining on top. Draw up the edges of the foil and scatter in the bell pepper and tomatoes. Lay the herbs on top of the fish, pour over the wine and season with salt and pepper.

Seal the edges of the foil to make sealed parcels and place them in a large roasting pan. Roast in the oven for 25-30 minutes or until the fish is cooked through.
