4 large, baking potatoes
2 scallions (finely chopped)
2 tomatoes (deseeded and chopped)
3 Tbsps olive oil
lemons (juiced)
4 Tbsps Crème fraiche

Preparation steps

Heat the oven to 200ºC (180ºC fan) 400ºF, gas 6.

Scrub the potatoes well, dry them with a clean tea towel and wrap each one in tin foil. Place the potatoes on the middle shelf of the oven and bake for 45 minutes - 1 hour or until cooked through.

Meanwhile, mix together the spring onions and tomatoes and add the oil and lemon juice. Season with salt and pepper and set aside while the potatoes cook.
4.
Slice open the cooked potatoes, add a tablespoon of creme fraiche to each one and top with the spring onions and tomatoes.
