Preparation steps

1.

Simmer honey, butter, cream and sugar in a saucepan over medium heat for about 5 minutes while stirring. Add almonds and cook for another 5 minutes. Add the orange peel and cherries, stir and simmer for 3 minutes.

2.

Spread the Florentine mixture about 1 cm (approximately 1/2 inch) thick on a baking sheet lined with parchment paper and bake in preheated oven (200°C or approximately 400°F; second shelf from the bottom). Bake about 12 minutes.

Remove, let cool on the sheet; once cooled, place on a cutting board. Peel off the parchment paper and cut into approximately 2 x 3 cm (approximately 1 x 1 inch) large diamonds.

3.

Melt the crushed chocolate over warm water, then pour into a small freezer bag. Cut off a tiny corner and drizzle stripes over the cooled florentine.
