3 ½ ounces candied Fruit (such as cherries, oranges, lemons)
5 ounces Whipped cream
3 ½ ounces butter
3 ½ ounces cane sugar
1 tablespoon Vanilla sugar
3 tablespoons honey
2 tablespoons Pastry flour
3 ½ ounces almonds (chopped)
7 ounces slivered almonds
3 ½ ounces dark Couverture
2 teaspoons neutral vegetable oil

Preparation steps

Preheat the oven to 350°F.

Chop the candied fruits. Mix the cream with butter, sugar, vanilla sugar, and honey, briefly boil while stirring, then stir in the flour, chopped almonds, and almond slices. Add the candied fruit and let boil again briefly. Remove from heat. With 2 teaspoons drop small heaps of dough at intervals of about approximately 2" on a lined baking tray.

Bake in preheated oven on the middle rack about 12 minutes until golden. Immediately carefully remove with paper and flip onto a cooling rack (with the bottom side up).

Melt the crushed chocolate with oil over a hot water bath. Coat the Florentines on the bottom with the chocolate and allow to dry.
