100 grams sugar
2 Tbsps Vanilla sugar
30 grams butter
2 Tbsps honey
125 milliliters Whipped cream
50 grams candied orange
2 Tbsps raisins
2 Tbsps Pastry flour
40 grams chopped almonds
40 grams chopped Walnut
20 grams chopped Pine nuts
60 grams slivered almonds
150 grams Dark chocolate
1 tsp vegetable oil

Preparation steps

Combine the sugar with the vanilla sugar, the butter, honey and cream in a small saucepan and bring to a boil, stirring constantly, until sugar is dissolved and mixture is carmelized. Add the candied orange, chopped raisins and flour and mix well. Stir in the nuts, mix well and remove the pan from the heat.

Preheat the oven to 180°C (approximately 350°F).

Pour the mixture on a baking sheet lined with parchment paper and spread 6-8 mm (approximately 1/4-1/3 inch) thick. Bake until golden brown and crisp, 10-12 minutes. Allow to cool on a wire rack. If the candy has become almost solid, cut with a sharp knife into small squares and let cool completely.

To decorate, melt chopped chocolate with the oil in a heat-proof set over a pan of  hot water. Drizzle over the candy and leave to dry on parchment paper.
