- For the crepe batter
- 2 eggs
- 250 grams Pastry flour
- salt
- 500 milliliters milk
- 20 grams butter (for frying)
- 4 Strawberries
- 4 fresh Apricot
- 200 grams Blueberries
- 2 Tbsps sugar
- 250 grams Quark
- 1 can Apricot
- 4 centiliters Calvados
Preparation

Wash, quarter and remove the cores from the apricots and strawberries.

For the crepes, stir all ingredients to form a dough and fry in a pan with melted butter, making approximately 8 pancakes. Remove and drain on parchment paper. Meanwhile, wash the blueberries, drain and set aside 2 tablespoons for decoration. With the remaining blueberries, combine with 2 tablespoons sugar and mix with yogurt, and add 1 tablespoon of this mixture into each crepe, then close the crepes to form a pouch, twisting the top slightly to close. Mix the apricots with a little juice puree and mix with Calvados. Place a crepe on serving plate, pour the fruit and Calvados mixture on top and serve on fire.
