grated Hard cheese (such as Emmentaler)

Vegetable oil (for frying)

Preparation steps

Scrub and rinse potatoes. Steam potatoes about 30 minutes, then peel and press through a potato ricer. Rinse fish, pat dry and finely chop. Peel and finely chop shallot. Stir fish and shallot into the potatoes, along with egg, dill, potato starch and cheese. Season with salt, pepper and nutmeg. Mix well until mixture holds together and can be molded. Shape into small patties and roll in breadcrumbs. In a nonstick pan, heat oil. In batches, fry patties, turning occasionally, until golden-brown on both sides, 6-8 minutes.

Drain patties on paper towels and serve with a green salad, if desired.
