- For the cake
- 5 eggs
- 1 tablespoon lemon juice
- 120 grams sugar
- 100 grams Pastry flour
- 50 grams cornstarch
- For the filling
- 1 packet Vanilla pudding (for 500 ml liquid)
- 2 tablespoons sugar
- 250 grams Sour cherry (from a jar, with juice)
- 250 milliliters Apple juice (plus more if needed)
- 4 tablespoons Jam (such as cherry)
- For decorating
- 120 grams soft butter
- 60 grams sugar
- 120 grams cream cheese
- 150 grams powdered sugar
- yellow and blue Food coloring
Preheat oven to 180°C (approximately 350°F).
Line bottom of rectangular springform pan with parchment paper.
Separate eggs and beat egg whites with lemon juice until stiff. Beat egg yolks with sugar until creamy. Mix flour and cornstarch, sift over egg white mixture and fold in with a whisk. Fold egg yolk mixture into egg white mixture to an airy batter. Spread batter in prepared pan, smooth top if necessary and bake until cake tests done with a toothpick, about 25 minutes. Remove cake from oven and let cool in pan.
For the filling, mix sugar with pudding mix. Mix cherries, cherry juice and apple juice in a saucepan and stir in sugar mixture. Bring filling mixture to a boil, adding more apple juice if necessary. Let filling cool.
Loosen cake from pan and cut in half horizontally. Set pan around bottom cake layer and spread jam and filling over cut surface of cake. Replace top layer of cake and carefully remove pan.
For the frosting, mix powdered sugar and apple juice until smooth and dye blue with food coloring. Frost top and sides of cake with frosting.
For decorating, beat butter and sugar until creamy. Beat cream cheese into butter mixture, add as much powdered sugar as needed to reach spreadable consistency and dye blue and yellow with food coloring. Place yellow frosting in a pastry bag and pipe frosting onto sides of cake. Place blue frosting in a pastry bag and pipe a wave pattern at top edge of cake.
For the fish, divide fondant into portions. On a work surface dusted with powdered sugar, knead various food colorings into portions of fondant. Form fish, bubble and plant shapes as desired from colored fondant and place on cake. If desired, decorate cake with fish-themed cake decorations, gummy fruit candies and other small candies before serving.
