fresh Salmon fillet (skinned, ready-to-cook, cut into pieces approx. 1.5 cm wide)
2 tablespoons

Leek (cut in half lengthways and chopped)

Garlic clove (crushed)

fresh Parmesan cheese (grated)

unwaxed lemon (cut into wedges)

Preparation steps

1.
Fry the fish in hot oil on all sides. Add the leek and the garlic and fry for a few minutes. Deglaze with the wine and the stock and cook on a medium heat for around 10 min.

Cook the pasta in boiling, salted water until al dente.
3.
break the fish up into smaller pieces, drain the pasta, add to the fish mixture and season with salt, ground black pepper and a dash of lemon juice.
4.
Arrange in bowls and sprinkle with the cheese. Garnish with lemon wedges.
