Preparation steps

1.
For the pancakes: beat together the flour, sugar, salt, eggs, egg yolk and 2 tablespoons melted butter in a mixing bowl.

Gradually whisk in the milk and orange liqueur. Leave to stand for 1 hour.

Heat a frying pan or crepe pan and put in a little butter to coat the base. While it is melting, stir the water into the batter.

Pour a small ladleful of batter into the pan and tilt it so that the batter covers the base of the pan. When bubbles form, turn the pancake over and cook the other side for 20-30 seconds until set. Repeat the process until all the batter is used, adding a little more butter to the pan for each pancake.

For the filling: break up the chocolate and put into a heatproof bowl with the espresso. Place over a pan of simmering (not boiling) water, until the chocolate has melted. Remove from the heat, stir in the liqueur and leave to cool slightly.

Put the egg yolks and vanilla into a heatproof bowl. Place over a pan of simmering (not boiling) water and whisk until thick and foamy.
7.
Whisk the cream until thick, but not stiff.
8.
Whisk the egg whites and sugar until stiff.
9.
Whisk the egg yolk mixture into the chocolate until smooth.
10.
Gently fold in the whipped cream and soured cream, followed by the egg whites until evenly blended.
11.
Spread a little of the chocolate cream on each pancake, fold over and put onto serving plates. Dust with icing sugar and decorate with orange zest.
