Fig and Red Currant Jam
The sweet fig, with its high proportion of natural sugar, provides plenty of energy for the whole day already at breakfast. And it contains enzymes that regulate and support our digestion.
When buying figs, look out for soft specimens, then the fruits are fully ripe. If they are crunchy, the ideal degree of ripeness has not yet been reached. And only take figs with intact skin, otherwise the fruit will spoil quickly.

Rinse jars (each about 400 ml) (each approximately 14 ounces) and their matching lids with boiling water and let dry upside down on a kitchen towel. Cut figs into quarters.
Place figs cut sides up on a cutting board and use a spoon to scrape the flesh out of the skins.
Measure out 800 grams (approximately 1.75 pounds) of fig pulp.
Rinse currants and drain well. Use a fork to strip currants from stems. Measure out 700 grams (approximately 1 1/2 pounds) of currants and mix with figs.
Combine fruit and sugar in a pot and bring to a boil, stirring constantly.
Continue to boil for 3 minutes, stirring constantly.
Add cassis and cook for 1 more minute.
Ladle into jars, cover with lids and refrigerate for up to 2 weeks.
