Preparation steps

Step 1/5
Mix together the flour, almonds, cocoa powder, cinnamon and icing sugar with a pinch of salt and pile onto the work surface. Create a well in the middle and place the butter around the well. Crack the egg into the well along with the egg yolks and chop all the ingredients up together so that breadcrumbs are formed. Quickly knead into a smooth dough, shape into a ball, wrap in cling film and chill for 2 hours.

Heat the oven 190°C (170°C in a fan oven), 375°F, gas 5 and line a baking tray with greaseproof paper.

Roll the dough out onto a floured work surface approx. 4 mm thick. Cut out 60-80 small reindeer and place on the prepared baking tray. Bake for 6-8 min. Remove from the baking tray along with the paper and leave to cool.

Melt the chocolate spread in a bain-marie and spread onto half the reindeer biscuits - do not spread onto the legs. Create sandwich biscuits by placing the remaining biscuits on top.
Step 5/5
Mix together the icing sugar and the lemon juice to form a thick mass. Fill into a pipping bag with a small nozzle and pipe markings and eyes onto the reindeer. Leave to dry and then do the same on the other side. Leave to dry and store in an airtight container.
