- ⅞ cup Madeira
- 3 Tbsps all-purpose flour
- 2 ½ cups chicken stock (or turkey or beef stock)
- ⅞ cup Broth (skimmed of fat)
- 1 Tbsp Wholegrain Mustard

Whisk the Madeira into the flour until smooth.
Heat the stock and meat juices in a pan. Pour in the flour mixture and add the mustard and bring to a boil. Cook for 1-2 minutes, whisking until thickened.
Pour into a warmed gravy boat.
