Fennel Lamb's Lettuce Juice

- 7 ozs lamb's lettuce
- 1 small Fennel bulb
- 1 small Lime
- 1 tsp Horseradish
- In addition: Ice cubes
Rinse the lamb's lettuce and spin dry.
Rinse and coarsely chop fennel.
Cut lime in half and squeeze juice.
Rinse and peel horseradish. Grate half of the root on a coarse grater.
Dice remaining horseradish coarsely and extract juice with lamb's lettuce and fennel in a juicer. Pour into a glass with lime juice and ice cubes. Stir and garnish with grated horseradish.
