For the crust
200 grams Shortbread
80 grams melted butter
For the cream
8 sheets white gelatin
600 grams cream cheese
200 grams Crème fraiche
150 grams sugar
4 centiliters Coconut liqueur
200 milliliters Whipped cream (at least 30% fat content)
300 grams white, seedless Grape
For the fruit jelly
4 sheets white gelatin
150 milliliters Apple juice
100 milliliters white Grape juice
5 Tbsps Coconut flakes
3 Maraschino cherry
1 Orange

Preparation steps


For the bottom, place shortbread in a freezer bag and roll over with a rolling pin to make fine crumbs. Mix with melted butter and press into bottom of a springform pan lined with parchment paper. Chill for 30 minutes. For the topping, soak gelatin in cold water. Stir together cream cheese, cream, sugar and liqueur. Whip cream. Rinse and halve grapes. Put 2 tablespoons aside for garnish.


Squeeze gelatin well and melt in a saucepan. Stir in 2 tablespoons of cream cheese mixture. Once mixed, add back to cream cheese mixture. Fold in whipped cream and grapes. Spread over crust and chill for 2 hours. For the fruit jelly, soak gelatin in cold water.


Slightly warm 3 tablespoons of apple juice in a pot, squeeze gelatin and add to pot to dissolve. Add remaining juice and grape juice. Spread over cake. Chill for another 2 hours. Remove cake ring and decorate cake edge with coconut flakes. Serve cake garnished with reserved grapes, cherries and orange slice.
