Espresso Dates

- 13 ozs fresh Date
- 1 stalk cinnamon
- 4 allspice
- 12 Cardamom
- 1 ¾ cups Espresso (or very strong coffee)
- 1 Tbsp sugar
- 1 lb Goat's milk yogurt
- 1 Organic orange
- 3 drops Orange blossom water
- Lemon balm (to taste)
Cut dates along one side and remove the pits.
Break cinnamon stick into small pieces. Combine dates, cinnamon and allspice in a large food storage jar.
Crush cardamom pods with the side of a large knife.
Heat espresso with sugar and cardamom in a small pot to just below the boiling point and pour over the dates.
Secure lid on the jar and let the dates soak for 2-3 days in the refrigerator.
On the day before serving, spoon yogurt into a sieve lined with a coffee filter (or cheesecloth). Cover with foil and let drain overnight in the refrigerator.
Rinse orange, wipe dry and finely grate zest. Stir together strained yogurt, 1 teaspoon orange zest and the orange blossom water until smooth. Serve chilled dates with the yogurt sauce and garnish with lemon balm and more orange zest.
