100 grams Beef tallow
100 grams mixed, candied Fruit
100 grams raisins
100 grams Currants
50 grams almonds (chopped)
100 grams breadcrumbs
100 grams brown sugar
2 Apple
3 eggs
3 Tbsps milk
4 centiliters Whiskey
½ organic lemon (zested)
1 generous pinch cinnamon
For preparing
6 small Ramekins (about 150-160 ml or .7 ounces)
butter (for greasing)
Whipped cream (for serving)

Preparation steps

1.

Remove cuticles from tallow and mince or process through a meat grinder.

Cut candied fruit into small cubes and mix well with raisins, currants, almonds, breadcrumbs, sugar and tallow.

Combine eggs, milk and whiskey and season with lemon zest and cinnamon. Peel, quarter, core and grate apples. Combine dry ingredients, egg mixture and grated apples and mix well.

Grease ramekins with butter and pour mixture into ramekins. Firmly press down and cover tightly with aluminum foil.

Bake in a hot water bath in an oven preheated to 150°C (approximately 300°F) for about 2 hours (3 hours if using a large pan). Remove and store covered until ready to serve. Serve with a little cream.
