150 grams small white Beans (dried)
1 onion
1 Tbsp vegetable oil
1 pc ginger (about 2 cm)
1 Tbsp Tomato paste

Preparation steps

Let the beans soak in water overnight. The next day, drain the beans. Peel the onion and coarsely chop. Peel and grate the ginger. Heat pan with vegetable oil and cook the onions until translucent, then add the ginger and tomato paste. Season with salt, pepper, sugar and bay leaf. Add the tomato purée and tomato juice. Followed by adding the beans, mix and simmer for about 45-60 minutes, until the beans are soft. Remove the bay leaf.

Cook the bacon in a pan until crispy. In a second pan with a little oil, crack the egg into the pan and fry until the egg has set. To serve, give each person two slices of bacon with a fried egg with some beans next to it. Pepper the egg to taste.
