½ cup all-purpose flour
¼ cup granulated sugar (plus 2 tablespoons)
3 large eggs
3 Tbsps butter (melted)
2 Tbsps lemon zest (finely grated)
¼ cup milk (plus 2 tablespoons)
3 cups fresh Raspberries
powdered sugar for dusting (optional)

Preparation steps

Preheat oven to 350º F. Butter a 9-inch round pan or baking dish.

In a mixing bowl, whisk the flour and sugar together. Whisk in the eggs, melted butter and lemon zest, mixing until smooth. Add the milk, whisk until light and smooth, about 3 or 4 minutes. Using a rubber spatula, gently fold in 2 cups of raspberries. Pour batter into prepared baking pan and top with remaining berries.

Bake for 25 to 30 minutes, or until the clafouti is set and golden. Cool slightly. Dust with confectioners' sugar, if desired. Cut into wedges and serve.
