Preparation steps

1.
Bring a large pan of salted water to the boil and blanche the beans for 2 minutes. Drain and refresh in iced water and reserve to one side.
2.
In a large bowl, combine the peppers, tomato, rice and olives together.
3.
Stir in the cooked rice dress the mixture with salt, pepper and the olive oil. Sprinkle the chopped parsley into the mixture and stir again.
4.
Divide the mixture between serving bowls and top with the tuna. Garnish with the lemon balm and sprigs of parsley before serving.
