4 tablespoons
3.333 cups
½ teaspoon
½ cup
superfine caster sugar
grated Nutmeg
ground Cardamom
ground cinnamon
lemon zest (from 1 lemon)
2 tablespoons
Golden raisins
2 tablespoons
almonds (finely chopped)
1
instant Dry yeast
¾ cup
1
egg (beaten)
¾ cup
warm milk
In addition
1 cup
1 tablespoon

1 tablespoon

Preparation steps

1.
Place the dried fruits and candied peel in a bowl with the rum and leave to soak overnight.
2.
Place the flour in a bowl with the salt, sugar, spices, lemon zest, sultanas, almonds and yeast. Add 2 tbsp of melted butter and the egg and whisk in enough milk to make a soft dough.
3.
Knead for 5 minutes until smooth and elastic. Return to the bowl, cover loosely and leave to rise in a warm place for 1 hour or until doubled in size.
4.
Knead the dough well, then cut the remaining butter into pieces and knead a little at a time into the dough along with the dried fruit and peel.
5.
Wrap in baking parchment and chill for 20 minutes. Roll out on a floured surface to about 15x40cm oval. Shape the marzipan into a sausage approximately the same length and place in the centre of the oval and wrap the dough around the marzipan. Transfer to a greased baking sheet, leave to rise for 30 minutes.
6.
Preheat the oven to 180°C | 350F | gas 4.
7.
Bake the stolen for about 30 minutes, then transfer to a wire rack. Brush with butter and sugar and serve warm.
