For the elderberry sorbet
200 milliliters elderflower syrup
2 Tbsps lemon juice
1 very fresh egg white
For the strawberry sauce
300 grams Strawberries
50 grams powdered sugar
For the elderflower fritters
12 Elderflower
100 grams Pastry flour
1 Tbsp sugar
1 tsp Vanilla sugar
Zest of an untreated Organic orange
150 milliliters white wine
2 Tbsps melted butter
2 egg whites
Fat (for frying)
powdered sugar (for dusting))

Preparation steps


For the elderberry sorbet: In a bowl, stir together the syrup, 200 ml (approximately 7 ounces) of water, lemon juice and egg white and beat well. Place the mixture in an ice cream maker and freeze according to manufacturers' directions or pour into a metal bowl and freeze 3 hours, stirring vigorously with a fork every 20 minutes. Spoon into small glasses and garnish to taste with a little strawberry sauce.


For the fritters: Rinse and dry the elderberry flowers. In a bowl, whisk together the flour, sugar, vanilla sugar and orange zest. Stir in the wine and butter, and let the batter rest for 20 minutes. Beat the egg whites until very stiff and fold into the batter. Heat the oil in a deep saucepan. Drag the flowers through the batter. and working in batches, fry until golden brown. Transfer to paper towels to drain. Before serving, sprinkle with powdered sugar.


For the strawberry sauce: Rinse and hull the strawberries, puree through a sieve and mix with powdered sugar.
