Peel, halve and thinly slice onions. Rinse snow peas, remove strings and blanch in a pot of boiling salted water until al dente, about 2 minutes. Cut snow peas lengthwise into very thin strips. Divide between 4 glasses, reserving some strips for garnish.

Heat the oil in a pan, add the onions and sugar and cook, stirring occasionally until golden brown. Add the soy sauce, simmer for a minute and set aside.

Cook eggs in a pot of simmering water for about 8 minutes, depending upon the degree of doneness desired. Peel and place in the glasses. Top with onions and serve garnished with ginger and the remaining snow pea strips.
