Preheat the oven to 220°C (approximately 425°F).

Rinse the eggplant, cut off the stem and cut into slices. Sprinkle with salt and let stand for about 20 minutes. Pat dry and fry on both sides until golden brown in a hot pan with 2 tablespoons oil. Remove, drain on paper towels and place on a parchment paper-lined baking sheet. Rinse tomatoes, remove the stems and cut mozzarella into slices. Top each eggplant slice with tomato slices, a slice of salami and mozzarella. Season with pepper and bake until golden brown in a preheated oven. Serve garnished with basil.
