100 grams dark Chocolate frosting
160 grams white Chocolate
40 grams butter

Preparation steps

1.

Whisk eggs, salt and sugar with a whisk or hand mixer until fluffy. Stir in the eggnog. Mix the flour with the starch and the baking powder and gently fold into the egg mixture.

Line a baking sheet with parchment paper. Pour the batter into the piping bag and squeeze out teaspoon-sized heaps on the baking sheet.

Bake on the center rack of a preheated oven at 180°C (approximately 350°F) for about 10 minutes, then let cool on a wire rack.

Prepare the chocolate frosting according to package instructions and spread onto the bottom of the cookie. Decorate the top as desired.

Break the white chocolate into small pieces and melt together with the butter and the eggnog, continuously stirring until smooth. Chill for at least 1 hour. Beat with an electric mixer until light and fluffy. Fill a pastry bag with the mixture, distribute on one cookie and place a second cookie on top to form a cookie sandwich. Let it set then serve.
