Preparation steps

1.
Soak the beans in water overnight.

Drain the beans, put in a pan and cover with well salted water. Bring to the boil and simmer on a moderate heat for around 45 minutes.
3.
Brown the sausage pieces in oil in a hot pan. Drain the beans, add to the sausage and stir through the garlic, tomatoes, herbs and chilli. Season with salt and ground black pepper and simmer for around 5 minutes on a moderate heat. Season to taste with vinegar.
4.
Fry the eggs in a hot pan, salt lightly and serve arranged on top of the beans.
