Preparation steps

1.

Soften the gelatine in cold water. Heat 4 tablespoons yogurt in a small saucepan and dissolve the gelatine in it. Mix with the remaining yogurt and sugar in a bowl.

2.

Beat the egg whites and powdered sugar until stiff and cut resistant. Gently fold into the yogurt mixture. Line 4 round ramekins (about 10 cm, approximately 4 inches, in diameter) with plastic wrap and pour in the mousse. Chill for about 3 hours in the refrigerator.

3.

Just before serving, rinse the strawberries, hull and cut into quarters. Puree 100 g (approximately 4 ounces) strawberries for a strawberry sauce. Spread the strawberry sauce onto serving plates and turn out the mousse into the sauce. Top the mousse with remaining strawberries. To serve, dust with powdered sugar and garnish with fresh mint.
